WW recipe that will give you a real kickstart in the morning

This recipe from WW, formerly Weight Watchers, will give you a real kickstart in the morning, making it ideal preparation for a day at work, or a relaxing time on your staycation. And because it uses lean bacon medallions, it’s much better for you than a traditional fry-up.

Ingredients

150g mushrooms

Morning BMT Serves 2

200ml vegetable stock

Four bacon medallions

Two large tomatoes

Two slices WW Soft Malted Danish Bread

Method

1. Preheat the grill. Slice the mushrooms and put them into a nonstick frying pan. Add the vegetable stock (made with a vegetable stock cube) and simmer for six to seven minutes.

2. Meanwhile, arrange four bacon medallions on the grill rack and cook for two to three minutes; then turn them over. Slice the tomatoes thickly and arrange them next to the bacon. Grill for another two to three minutes.

3. At the same time, toast two slices of the WW Danish Bread.

4. Place the toast on two warmed plates. Drain the mushrooms and arrange them on or next to the toast, along with the tomatoes and bacon.

5. Season with freshly ground black pepper and serve.
