Spencer hails from Liverpool where he first studied to be a chef at Halton College, before going on to train at the prestigious Adelphi Hotel and working at Aintree Race Course.

Having worked all over the country, including a stint in a Roux brothers’ kitchen, Spencer was Head Chef at The Fence Gate, before his move to Bertram’s.

He said: “I’m delighted to be Head Chef of a new, modern and vibrant restaurant like Bertram’s. It is a fabulous venue.”

Oliver Brown, director at Crow Wood, said: “Spencer is very well known in this area – but he has also worked under and alongside very influential chefs such as the Roux brothers.
