WW Savoury French toast recipe

Here’s a light breakfast dish which will get your day off to a great start with lots of vegetables to make you feel virtuous.

Savoury French toast with mushrooms & tomatoes

Ingredients

Savoury French toast

Four eggs

80ml skimmed milk

Four 30g slices crusty bread

1 garlic clove, crushed

WeightWatchers

200g button mushrooms, halved

200g cherry tomatoes

30g vegetarian Italian-style hard cheese

1tbsp chopped chives

Calorie-controlled cooking spray

Olive oil

Method

1. Whisk the eggs and skimmed milk in a jug. Pour into a shallow dish. Add the four slices of bread and turn to coat. Set aside for 10 minutes, turning once.

2. Meanwhile, heat one tablespoon of olive oil in a nonstick frying pan and cook the crushed garlic, the halved button mushrooms and the cherry tomatoes for five minutes. Transfer to a plate and cover to keep warm.

3. Wipe the pan and mist with calorie-controlled cooking spray. Cook the bread, two slices at a time, for three minutes on one side. Sprinkle the uncooked side with the grated vegetarian Italian-style hard cheese, then turn slices over and cook for two minutes, or until golden.

4. Serve topped with the mushroom mixture, sprinkled with a tablespoon of chopped chives.
