A classic Waldorf salad from Weightwatchers

This one is a classic Waldorf, with some cooked chicken.

Serves 1 l Prep 10 minutes

Ingredients

120g shredded cooked skinless chicken breast fillet

1 small cored and diced apple

1 thinly sliced celery stick

Eight halved white grapes

Quarter of sliced small red onion

20g roughly chopped walnuts

Romaine lettuce leaves

1 tbsp reduced-fat mayonnaise

1 tbsp 0% fat natural Greek yogurt

1 tbsp lemon juice

1 tsp white wine vinegar

1⁄2 tsp dried dill

Method

1. In a medium bowl, toss together the cooked chicken breast, the apple, thinly sliced celery stick, white grapes, sliced red onion and the walnuts. Season to taste.

2. Tear three Romaine lettuce leaves into bite-size pieces and arrange on a serving plate, then top with the chicken mixture.

3. In a bowl, whisk together the reduced-fat mayonnaise, the Greek yogurt, the lemon juice, the vinegar and the dried dill, until combined, then drizzle over the salad and serve.
