A classic Waldorf salad from Weightwatchers
The weather seems to be warming up and what better for a sticky summer’s night than a light and fruity salad?
This one is a classic Waldorf, with some cooked chicken.

120g shredded cooked skinless chicken breast fillet
1 small cored and diced apple
1 thinly sliced celery stick
Eight halved white grapes
Quarter of sliced small red onion

Romaine lettuce leaves
1 tbsp reduced-fat mayonnaise
1 tbsp 0% fat natural Greek yogurt

1 tsp white wine vinegar
1⁄2 tsp dried dill

Hide Ad1. In a medium bowl, toss together the cooked chicken breast, the apple, thinly sliced celery stick, white grapes, sliced red onion and the walnuts. Season to taste.
2. Tear three Romaine lettuce leaves into bite-size pieces and arrange on a serving plate, then top with the chicken mixture.
3. In a bowl, whisk together the reduced-fat mayonnaise, the Greek yogurt, the lemon juice, the vinegar and the dried dill, until combined, then drizzle over the salad and serve.
